Delicious Blackened Chicken Recipe: Easy, flavorful, and perfect for a quick dinner. Spicy, smoky, and juicy, it’s ideal for family meals or meal prep!

This recipe is very versatile and goes well with this delicious tomato and parmesan cream sauce. You can use it in salads, wraps, flatbreads, and more!

Start by making your blackening spice dry rub. This is a mixture of several spices like paprika, garlic powder, onion powder, thyme, oregano, basil, salt, pepper, and cayenne.

Mix everything together so it is well blended and set it aside. Save time on weeknights and premake the rub and keep some in a container to have on hand.

Prepare the chicken breasts by removing it from the packaging. Pat it dry with paper towels and then lightly coat in oil and set them aside.

Evenly coat the chicken on all sides with the blackening rub. You want an even thin layer that can be patted ore pressed on (do not rub it in).

In a cast iron pan, heat a small amount of oil to medium-high. Sear the chicken top side down for 3-4 minutes or until if easily lifts to flip.

Flip the chicken and remove it from the heat. Place it into a 375 F. oven and cook until it reaches an internal temperature of 165 F. Remove it from the oven and let it rest.

This chicken is incredibly versatile, but I love making this tomato parmesan cream sauce in the same pan while the chicken rests. (info linked below)
