This is a book club where we never actually read the books, I just make cocktails named after them. We just finished off making this delicious Strawberry Lemonade Whiskey Smash and I’m excited to be back with another love themed drink this week inspired by the classic novel, Pride and Prejudice, by Jane Austin.

This weeks drink features a fun lower carb way to make a classic Pimms Cup. A traditional Pimm’s cup is made with the gin-based liqueur that hails from England ( very fitting for this book inspired drink in my opinion).

A Pimm’s cup is a refreshing drink filled with ginger beer, cucumber, strawberries, the occasional citrus, and some mint. It’s a refreshing drink that can cool you off on a hot summer day or to indulge in when the mood strikes. Let’s get to mixing!

A Low Carb Pimms Cup Cocktail Recipe:

  • 3 oz. Pimms No. 1
  • Zevia Ginger Beer or Diet Ginger Ale
  • 1 Cucumber Spears
  • 1 Sliced Strawberry
  • 1 Lemon Wheel
  • 1 Mint Spring
  • Ice, crushed

How to mix up a Pimm’s Cup Cocktail:

This is the perfect warm summer night cocktail for several reasons. The first, is it is literally just Pimms No. 1 mixed with your favorite ginger beer (I used Zevia brand for a low carb option but you can do what works best for you).

I build this cocktail in the class I drink it in, so less materials to wash is also always a plus too in my book (no pun intended ha). Start this drink off with a nice heap of crushed ice pieces and add in the Pimms.

Next, I opted to go with the Zevia brand of ginger beer. Many recipes just call for ginger ale, but I thought this low carb ginger beer would make a good sub. You could easily still use ginger ale (diet or not) too. Simply, pour your ginger beer into the cup, give it a quick stir!

What I love about this drink is that it feels very refreshing, and isn’t sweet. The cucumber spears, sliced strawberries, and mint sprig add a lot of flavor and aromatics to this cocktail. Garnish with these items add a straw and serve! Feel free to multiply the recipe by four, to make a larger batch pitcher to serve at your next summer BBQ.

Ingredients

  • 3 oz. Pimms No. 1
  • Zevia Ginger Beer or Diet Ginger Ale
  • 1 Cucumber Spears
  • 1 Sliced Strawberry
  • 1 Lemon Wheel
  • 1 Mint Spring
  • Ice crushed

Instructions

  • 1. Add crushed ice to a tall glass.
  • 2. Pour in the Pimm’s then top off with your ginger beer of choice.
  • 3. Stir the drink to combine the two and garnish with the cucumber spear, sliced strawberry, lemon wheel and mint spring and serve.

Notes

Zevia is a great 0 carb brand of ginger beer. You could also try a diet ginger beer or diet sprite or 7 Up.
