Weekday mornings can be busy. During the school year I am up and out the door by 6am most days (cost of being a culinary arts teacher….cooking starts early). So meal prepping is the easiest way for me to save time and eat healthy. But, if I am being completely honest, I think these just taste absolutely incredible. The ham gets a little crunchy, the eggs have a nice kick of flavor, it has cheese….I repeat….It. Has. Cheese! You really can’t go wrong with these.
How to build the perfect bite:
Pick your favorite lunch meat (I prefer ham). Spray a muffin tin with non-stick spray and place 1-2 pieces of ham into the muffin tin depending on the size and thickness of the meat. Beat some eggs together, add a bit of salt, pepper, and very much needed garlic powder. You can always experiment with flavors and spices. Add cooked veggies, different types of cheese, some red pepper flakes….whatever your heart desires. I like to add the cheese and a few green onions sprinkled right on top. It all bakes into these beautiful little hand held egg puffs that are easy to reheat, grab, and go! I hope you enjoy these easy low carb egg bites!
Ham & Egg Breakfast BitesPrint Recipe
- 12 Slices of ham
- 8 Eggs
- 3 tbsp. Milk (optional)
- 1/2 cup Shredded Cheese
- 3 Green onions, diced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
Preheat your oven to 350F and grease a muffin tin with non-stick spray.
Lay each ham slice into the muffin tin so it covers the bottoms and wraps up around the sides.
Whisk your eggs together with the milk (optional). Add your salt, pepper, and the garlic powder.
Pour the egg mixture into each cup about 2/3's the way full.
Sprinkle in the cheese and green onions.
Bake the eggs for 20-25 minutes until the centers are set.
Cool slightly before removing from the pan.
Serve hot of reheat for 1 minute in the microwave to grab and go!
Customize your egg cups by adding other vegetables or cheeses of your choice!
